Main Ingredients
- 2 cups Quinoa rinsed
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ½ cup Red Onion finely chopped
- ¼ cup Olives sliced
- ¼ cup Feta Cheese crumbled
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper freshly ground
1. Cook the quinoa according to package instructions and let it cool.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, olives, and feta cheese.
3. Add the cooled quinoa to the bowl and mix well.
4. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss to combine.
5. Serve immediately or refrigerate for later.
