Mediterranean Couscous Salad

Main Ingredients
- 1 cup couscous
- 1 cup boiling water
- 1 cucumber, diced
- 1 red bell pepper, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup black olives, sliced
- ¼ cup feta cheese, crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- to taste salt and pepper
1. In a saucepan, bring the water to a boil. Remove from heat, add the couscous, cover, and let sit for 5 minutes.
2. Fluff the couscous with a fork and transfer to a mixing bowl.
3. Add the cucumber, red bell pepper, cherry tomatoes, red onion, black olives, and feta cheese to the couscous.
4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
5. Pour the dressing over the salad and toss to combine.
6. Serve immediately or refrigerate for later.
