- 1 can Chickpeas drained and rinsed
- 1 cup Cucumber diced
- 1 cup Cherry Tomatoes halved
- ¼ cup Red Onion finely chopped
- ¼ cup Kalamata Olives sliced
- ¼ cup Feta Cheese crumbled
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Dried Oregano
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 4 pieces Whole Wheat Tortillas
In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, kalamata olives, and feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
Pour the dressing over the chickpea mixture and toss to combine.
Lay out the tortillas and spoon the chickpea salad mixture onto each tortilla.
Wrap the tortillas tightly and serve immediately.
