Meaty Stuffed Pepper Casserole
A hearty casserole with stuffed peppers, perfect for a family dinner.

Main Ingredients
- 6 bell peppers tops cut off and seeds removed
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion chopped
- 2 cloves garlic minced
- 1 can diced tomatoes 14.5 oz
- 1 cup shredded cheese cheddar or mozzarella
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat oven to 375°F (190°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
Stir in cooked rice, diced tomatoes, salt, and black pepper. Mix well.
Stuff each bell pepper with the beef mixture and place in a baking dish.
Top each stuffed pepper with shredded cheese.
Bake in preheated oven for 30-35 minutes, until peppers are tender and cheese is melted and bubbly.
