  • 2 cups Heavy cream
  • 1 tablespoon Lemon juice freshly squeezed

Instructions 

  1. Heat the heavy cream in a double boiler until it reaches 190°F (88°C).
  2. Remove from heat and stir in the lemon juice.
  3. Let the mixture cool to room temperature, then cover and refrigerate for 8 hours or overnight.
  4. Line a strainer with cheesecloth and place it over a bowl. Pour the mixture into the strainer and let it drain for 1-2 hours.
  5. Transfer the mascarpone cheese to an airtight container and refrigerate until ready to use.
