Ingredients 

Main Ingredients

  • 2 cups Granulated sugar
  • ½ cup Light corn syrup
  • ¼ cup Water
  • 2 large Egg whites at room temperature
  • ¼ teaspoon Cream of tartar
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a boil.
  2. In a mixing bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Slowly pour the hot syrup into the egg whites while beating constantly. Continue to beat until stiff peaks form and the mixture is glossy.
  4. Beat in vanilla extract. Use immediately or store in an airtight container.
