Ingredients

  • 1 cup Flour
  • 1 cup Sugar
  • ½ cup Butter softened
  • 2 Eggs
  • ¼ cup Lime juice freshly squeezed
  • 1 tablespoon Tequila
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the lime juice and tequila.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into a greased cake pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
