Ingredients

  • 2 cups Ripe mangoes, diced
  • 1 cup Coconut milk
  • ¼ cup Sugar
  • 2 tablespoons Cornstarch mixed with 2 tablespoons of water
  • 1 teaspoon Vanilla extract

Instructions 

  1. 1. Blend the diced mangoes until smooth.
  2. 2. In a saucepan, combine the mango puree, coconut milk, and sugar. Cook over medium heat until the mixture starts to simmer.
  3. 3. Stir in the cornstarch mixture and continue to cook, stirring constantly, until the pudding thickens.
  4. 4. Remove from heat and stir in the vanilla extract.
  5. 5. Pour the pudding into a mixing bowl and let it cool to room temperature. Then refrigerate for at least 2 hours before serving.
