Ingredients 

Base

  • 200 g digestive biscuits
  • 100 g melted butter

Filling

  • 250 g cream cheese
  • 200 ml double cream
  • 100 g sugar
  • 2 ripe mangoes (pureed)
  • 1 teaspoon vanilla extract
  • 3 eggs

Instructions 

  1. Crush the biscuits and mix with melted butter. Press into the base of a springform pan.
  2. Beat cream cheese, sugar, and vanilla until smooth.
  3. Add eggs one at a time, beating well after each addition.
  4. Fold in the mango puree.
  5. Pour mixture over the biscuit base.
  6. Bake at 160°C for 1 hour. Let cool, then refrigerate for at least 4 hours.
