Base
- 200 g digestive biscuits
- 100 g melted butter
Filling
- 250 g cream cheese
- 200 ml double cream
- 100 g sugar
- 2 ripe mangoes (pureed)
- 1 teaspoon vanilla extract
- 3 eggs
Crush the biscuits and mix with melted butter. Press into the base of a springform pan.
Beat cream cheese, sugar, and vanilla until smooth.
Add eggs one at a time, beating well after each addition.
Fold in the mango puree.
Pour mixture over the biscuit base.
Bake at 160°C for 1 hour. Let cool, then refrigerate for at least 4 hours.
