Mandazi are a form of fried bread that originated on the Swahili Coast. They are also known as Swahili coconut doughnuts.

Ingredients 

Mandazi Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cardamom
  • 1 cup coconut milk
  • 1 egg beaten
  • 1 tablespoon butter melted
  • 1 pinch salt
  • as needed vegetable oil for frying

Instructions 

  1. In a mixing bowl, combine the flour, sugar, baking powder, cardamom, and salt.
  2. In another bowl, mix the coconut milk, beaten egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix to form a dough.
  4. Turn the dough onto a floured surface and knead until smooth.
  5. Roll out the dough to about ¼ inch thickness and cut into triangles.
  6. Heat the oil in a frying pan over medium heat.
  7. Fry the dough triangles until golden brown on both sides.
  8. Remove and drain on paper towels.
