Preheat oven to 350°F (175°C).
In a mixing bowl, beat the sugar and eggs until fluffy.
Add the apricot jam and mix well.
In a separate bowl, sift together the flour and baking soda.
Add the dry ingredients to the egg mixture, alternating with the milk. Mix well.
Add the melted butter and vinegar. Mix until smooth.
Pour the batter into a greased baking dish and bake for 45 minutes.
While the pudding bakes, prepare the sauce by heating the cream, sugar, butter, hot water, and vanilla extract in a saucepan until the sugar is dissolved.
Pour the hot sauce over the pudding as soon as it comes out of the oven.
Let the pudding absorb the sauce before serving.
