Instructions
Preheat your oven to 375°F (190°C). Grease and flour your madeleine pan.
In a mixing bowl, whisk together the eggs and sugar until pale and thick.
Gently fold in the flour, salt, and lemon zest (if using).
Fold in the melted butter and vanilla extract until just combined.
Spoon the batter into the prepared madeleine pan, filling each mold about ¾ full.
Bake for 10-12 minutes, or until the edges are golden brown and the centers spring back when touched.
Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
