Ingredients 

Macaron Shells

  • 100 g Almond flour
  • 100 g Powdered sugar
  • 2 Egg whites at room temperature
  • 50 g Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Filling

  • 100 g Butter softened
  • 100 g Powdered sugar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, sift together the almond flour and powdered sugar. Set aside.
  3. In another bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue to beat until stiff peaks form. Add the vanilla extract and salt, and mix until combined.
  4. Gently fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
  5. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter to release any air bubbles. Let the macarons sit at room temperature for 30 minutes to form a skin.
  7. Bake for 15 minutes, or until the macarons are firm to the touch. Let cool completely on the baking sheet.
  8. For the filling, beat the butter until creamy. Gradually add the powdered sugar and vanilla extract, and beat until smooth.
  9. Pair the macaron shells by size. Pipe the filling onto one shell and sandwich with another.
