Louisiana Crawfish Etouffee

Main Ingredients
- 1 lb Crawfish tails peeled and deveined
- 1 cup Butter
- 1 cup Onion chopped
- 1 cup Celery chopped
- 1 cup Green bell pepper chopped
- 2 cloves Garlic minced
- 2 tablespoon Flour
- 2 cups Chicken broth
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Cayenne pepper
- 1 cup Green onions chopped
- 1 cup Parsley chopped
- 4 cups Cooked white rice
Melt butter in a large skillet over medium heat.
Add onion, celery, and bell pepper. Cook until softened.
Stir in garlic and flour. Cook for 2 minutes.
Gradually add chicken broth, stirring constantly.
Add salt, black pepper, and cayenne pepper. Simmer for 20 minutes.
Add crawfish tails and cook for another 10 minutes.
Stir in green onions and parsley. Serve over cooked white rice.
