Ingredients 

Main Ingredients

  • 4 slices Bacon cut into pieces
  • 2 cups Potatoes diced
  • 1 cup Cheddar Cheese shredded
  • 4 Eggs
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat the skillet over medium heat and cook the bacon until crispy. Remove and set aside.
  2. 2. In the same skillet, add olive oil and diced potatoes. Cook until potatoes are tender and golden brown.
  3. 3. Add the cooked bacon back to the skillet. Stir to combine.
  4. 4. Make four wells in the potato mixture and crack an egg into each well. Cook until eggs are done to your liking.
  5. 5. Sprinkle shredded cheddar cheese over the top and cover the skillet until the cheese is melted.
  6. 6. Season with salt and black pepper to taste. Serve hot.
