Preheat oven to 350°F (175°C).
In a mixing bowl, cream together butter and sugar until light and fluffy.
Add vanilla extract and mix well.
In another bowl, combine flour, ground almonds, cinnamon, and salt.
Gradually add dry ingredients to the butter mixture, mixing until just combined.
Divide dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out dough on a lightly floured surface to about ⅛-inch thickness.
Cut out cookies using a round cutter. Cut out a smaller shape from the center of half of the cookies.
Place cookies on a baking sheet and bake for 10-12 minutes or until lightly golden.
Let cookies cool completely. Spread jam on the solid cookies and top with the cut-out cookies.
