Main Ingredients
- 1 cup Unsalted butter softened
- 0.75 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 2 cups All-purpose flour
- 0.5 cup Almond flour
- 0.25 teaspoon Salt
- 0.5 cup Raspberry jam
- 0.25 cup Powdered sugar for dusting
1. Preheat oven to 350°F (175°C).
2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add vanilla extract and mix well.
4. Gradually add the all-purpose flour, almond flour, and salt. Mix until combined.
5. Roll out the dough on a floured surface to about ¼ inch thick. Cut out cookies using a cookie cutter.
6. Place cookies on a baking sheet and bake for 10-12 minutes or until edges are lightly golden.
7. Allow cookies to cool completely. Spread raspberry jam on the bottom side of one cookie and sandwich with another cookie.
8. Dust with powdered sugar before serving.
