Ingredients 

Main Ingredients

  • 1 cup dry lentils rinsed
  • 2 cups vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 8 taco shells
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese

Instructions 

  1. 1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. 2. Add rinsed lentils and vegetable broth to the skillet. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.
  3. 3. Stir in chili powder, cumin, paprika, and salt. Cook for another 5 minutes, stirring occasionally.
  4. 4. Warm taco shells according to package instructions.
  5. 5. Fill taco shells with lentil mixture and top with shredded lettuce, diced tomatoes, and shredded cheese. Serve immediately.
