Lentil Tacos Recipe

Main Ingredients
- 1 cup dry lentils rinsed
- 2 cups vegetable broth
- 1 onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 8 taco shells
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese
1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
2. Add rinsed lentils and vegetable broth to the skillet. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.
3. Stir in chili powder, cumin, paprika, and salt. Cook for another 5 minutes, stirring occasionally.
4. Warm taco shells according to package instructions.
5. Fill taco shells with lentil mixture and top with shredded lettuce, diced tomatoes, and shredded cheese. Serve immediately.
