Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat the pot over medium heat and add a splash of oil.
  2. 2. Add the chopped onion and minced garlic. Sauté until softened.
  3. 3. Add the rinsed lentils, vegetable broth, and diced tomatoes. Stir well.
  4. 4. Add the cumin, paprika, salt, and black pepper. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 45 minutes or until lentils are tender.
  6. 6. Adjust seasoning if needed and serve hot.
