Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 4 cups Vegetable Broth
  • 2 cups Fresh Spinach chopped
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the rinsed lentils, vegetable broth, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat and let it simmer for about 25 minutes, or until the lentils are tender.
  6. Add the chopped spinach and cook for another 5 minutes.
  7. Adjust seasoning if needed. Serve hot.
