Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 Avocados diced
  • 1 cup Cherry Tomatoes halved
  • 1 Cucumber diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 Lemon juiced
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Cook the lentils in a pot of boiling water for about 20 minutes or until tender. Drain and let cool.
  2. 2. In a mixing bowl, combine the cooked lentils, diced avocados, cherry tomatoes, cucumber, and red onion.
  3. 3. Drizzle with olive oil and lemon juice. Season with salt and black pepper to taste. Toss gently to combine.
  4. 4. Serve immediately or chill in the fridge for 30 minutes before serving.
