Lentil And Vegetable Soup

Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 medium Carrots chopped
- 2 stalks Celery chopped
- 1 can Diced Tomatoes 400 grams
- 4 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
1. Heat a large pot over medium heat. Add a splash of oil.
2. Add the chopped onion and garlic. Sauté until softened.
3. Add the carrots and celery. Cook for another 5 minutes.
4. Stir in the cumin and paprika. Cook for 1 minute.
5. Add the lentils, diced tomatoes, and vegetable broth. Bring to a boil.
6. Reduce heat and let it simmer for 30-35 minutes, until lentils are tender.
7. Season with salt and pepper to taste. Serve hot.
