- 1 cup quinoa rinsed
- 1 can chickpeas drained and rinsed
- 1 cup huckleberries
- 1 tablespoon olive oil
- 1 pc lemon zested and juiced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
1. Cook the quinoa according to package instructions.
2. In a pan, heat the olive oil over medium heat. Add the chickpeas and cook until slightly crispy.
3. In a mixing bowl, combine the cooked quinoa, chickpeas, huckleberries, lemon zest, and lemon juice. Season with salt and pepper.
4. Serve warm or chilled.
