  • 1 cup quinoa
  • 2 cups water
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped parsley

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes.
  3. Fluff quinoa with a fork. Add lemon zest, lemon juice, olive oil, salt, and pepper.
  4. Stir in chopped parsley. Serve warm or at room temperature.
