Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold, cut into cubes
  • ¼ cup sugar
  • 1 pinch salt
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 eggs
  • ½ cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest grated
  • ½ cup heavy cream

Instructions 

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Add egg yolk and cold water. Mix until the dough comes together. Press the dough into a tart pan.
  4. Bake the crust for 15 minutes. Let it cool.
  5. In another bowl, whisk together sugar, eggs, lemon juice, lemon zest, and heavy cream until smooth.
  6. Pour the filling into the cooled crust. Bake for 15 minutes or until the filling is set.
  7. Let the tart cool before serving. Enjoy!
