Ingredients 

Crust

  • 1 cup all-purpose flour
  • ½ cup butter, softened
  • ¼ cup powdered sugar

Filling

  • 1 cup granulated sugar
  • 2 large eggs
  • ¼ cup lemon juice freshly squeezed
  • 2 tablespoon all-purpose flour
  • ½ teaspoon baking powder

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup of flour, ½ cup of softened butter, and ¼ cup of powdered sugar. Mix until well blended.
  3. Press the mixture into the bottom of a greased 9x9 inch baking pan.
  4. Bake the crust for 15 minutes or until lightly golden.
  5. In another bowl, whisk together 1 cup of granulated sugar, 2 large eggs, ¼ cup of lemon juice, 2 tablespoons of flour, and ½ teaspoon of baking powder.
  6. Pour the filling over the baked crust.
  7. Bake for an additional 20-25 minutes, or until the filling is set.
  8. Allow to cool completely before cutting into squares.
