- 1 cup sugar
- 2 eggs separated
- 1 cup milk
- ¼ cup lemon juice freshly squeezed
- 1 tablespoon lemon zest grated
- ¼ cup all-purpose flour
- ¼ teaspoon salt
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the sugar and egg yolks until light and fluffy.
Add the milk, lemon juice, and lemon zest to the mixture and whisk until combined.
Sift in the flour and salt, and gently fold into the mixture.
In a separate bowl, beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the lemon mixture.
Pour the mixture into a greased pie dish and bake for 40 minutes, or until the top is golden brown and the center is set.
