Ingredients

  • 12 oz spaghetti
  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • ¼ cup olive oil
  • ¼ cup parmesan cheese, grated
  • to taste salt and pepper
  • 2 tablespoon fresh parsley, chopped

Instructions 

  1. 1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  3. 3. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.
  4. 4. Add the lemon zest and juice to the skillet, stirring to combine.
  5. 5. Toss the cooked spaghetti with the shrimp mixture. Add the grated parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  6. 6. Serve immediately, garnished with additional parsley if desired.
