Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 stick unsalted butter softened
  • 2 cups sugar
  • 1 cup ricotta cheese
  • 1 large egg
  • 3 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add the ricotta cheese, egg, lemon juice, lemon zest, and vanilla extract. Beat to combine.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  5. Drop dough by rounded tablespoons onto the prepared baking sheet.
  6. Bake for 15 minutes, or until the edges are slightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
