Ingredients 

Base

  • 1 cup All-purpose flour
  • ¼ cup Sugar
  • ½ cup Butter cold and cubed

Filling

  • 2 large Eggs
  • 1 cup Sugar
  • ¼ cup All-purpose flour
  • ½ cup Lemon juice freshly squeezed
  • 1 tablespoon Lemon zest
  • 1 cup Raspberries fresh or frozen

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a mixing bowl, combine 1 cup flour and ¼ cup sugar. Cut in cold butter until mixture resembles coarse crumbs. Press into the prepared baking pan.
  3. Bake for 15-20 minutes or until edges are lightly browned. Remove from oven and set aside.
  4. In another bowl, whisk together eggs, 1 cup sugar, ¼ cup flour, lemon juice, and lemon zest until smooth. Gently fold in raspberries.
  5. Pour the filling over the baked crust. Bake for an additional 20-25 minutes or until filling is set.
  6. Allow to cool completely in the pan before cutting into bars. Dust with powdered sugar if desired.
