Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in lemon zest and vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk. Stir in poppy seeds.
  5. Pour batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
