Lemon Poppy Seed Doughnuts

Doughnut Batter
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup buttermilk
- 2 large eggs
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
Preheat your oven to 350°F (175°C). Grease a doughnut pan.
In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, eggs, melted butter, vanilla extract, and lemon zest.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Spoon the batter into the prepared doughnut pan, filling each cavity about ¾ full.
Bake for 12-15 minutes, or until a toothpick inserted into the doughnuts comes out clean.
Let the doughnuts cool in the pan for a few minutes, then transfer to a cooling rack to cool completely.
