Instructions
Preheat oven to 400°F (200°C).
In a mixing bowl, combine panko breadcrumbs, lemon zest, olive oil, salt, and pepper.
Place salmon fillets on a baking sheet lined with parchment paper.
Spread lemon juice over the salmon fillets.
Press the panko mixture onto the top of each salmon fillet.
Bake for 12-15 minutes, or until the salmon is cooked through and the panko is golden brown.
