Lemon Lavender Shortbread Cookies

Main Ingredients
- 1 cup unsalted butter softened
- ½ cup sugar
- 2 cups all-purpose flour
- 1 tablespoon lemon zest freshly grated
- 1 teaspoon dried lavender culinary grade
- ¼ teaspoon salt
Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Mix in the lemon zest and dried lavender.
Gradually add the flour and salt, mixing until just combined.
Roll out the dough on a lightly floured surface to about ¼ inch thickness. Cut into desired shapes using a cookie cutter.
Place cookies on the prepared baking sheet and bake for 18-20 minutes, or until the edges are lightly golden.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
