Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • ¼ cup olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • to taste salt and pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
  5. 5. Add the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint to the bowl. Toss to combine.
  6. 6. Adjust seasoning with more salt and pepper if needed. Serve chilled or at room temperature.
