Lemon Herb Chicken Quinoa Recipe

Main Ingredients
- 2 pieces Chicken Breasts boneless, skinless
- 1 cup Quinoa
- 2 cups Chicken Broth low sodium
- 1 tablespoon Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 piece Lemon juiced and zested
- 2 cloves Garlic minced
- ¼ cup Fresh Parsley chopped
1. Cook quinoa in chicken broth according to package instructions.
2. Season chicken breasts with oregano, thyme, garlic powder, salt, and pepper.
3. Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side.
4. Remove chicken from skillet and let rest. In the same skillet, add minced garlic and cook until fragrant.
5. Add lemon juice and zest to the skillet, then return chicken to the skillet to coat with the sauce.
6. Serve chicken over cooked quinoa, garnished with fresh parsley.
