  • 1 lb shrimp, peeled and deveined
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 medium zucchini, spiralized
  • 1 whole lemon, juiced and zested
  • ¼ teaspoon red pepper flakes optional
  • to taste salt and pepper
  • 2 tablespoon fresh parsley, chopped

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add garlic and red pepper flakes, sauté for 1 minute.
  3. 3. Add shrimp, cook until pink, about 3-4 minutes.
  4. 4. Add zucchini noodles, lemon juice, and zest. Toss to combine.
  5. 5. Cook for another 2-3 minutes until zoodles are tender.
  6. 6. Season with salt and pepper. Garnish with parsley.
