Ingredients 

Main Ingredients

  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • ¾ cup fresh lemon juice
  • 3 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup unsalted butter, melted

Instructions 

  1. In a medium saucepan, combine sugar and flour.
  2. Gradually stir in lemon juice until smooth.
  3. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
  4. Boil for 1 minute, then remove from heat.
  5. In a separate bowl, beat eggs. Gradually add a small amount of hot lemon mixture to eggs, stirring constantly.
  6. Return egg mixture to saucepan and cook for 2 more minutes, stirring constantly.
  7. Remove from heat and stir in lemon zest and melted butter.
  8. Pour into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
  9. Chill in the refrigerator for at least 1 hour before using.
