Lemon Curd Roulade Recipe

Ingredients 

Main Ingredients

  • 4 large Eggs separated
  • 100 g Caster sugar
  • 100 g Self-raising flour sifted
  • 1 teaspoon Baking powder
  • 200 ml Double cream whipped
  • 200 g Lemon curd

Instructions 

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a mixing bowl, whisk the egg whites until stiff peaks form. Gradually add the caster sugar, whisking continuously until glossy.
  3. Gently fold in the egg yolks, followed by the sifted flour and baking powder.
  4. Spread the mixture evenly onto the prepared baking tray. Bake for 10-12 minutes or until golden and springy to the touch.
  5. Turn the sponge out onto a sheet of parchment paper dusted with caster sugar. Roll up the sponge with the parchment inside and let it cool.
  6. Once cool, unroll the sponge and spread with lemon curd and whipped cream. Roll up again without the parchment.
  7. Slice and serve.
