Ingredients

  • 3 units Lemons zested and juiced
  • 1 cup Sugar
  • 4 units Eggs large
  • ½ cup Butter unsalted, cut into pieces

Instructions 

  1. In a saucepan, combine lemon zest, juice, sugar, and eggs. Whisk until smooth.
  2. Place the saucepan over medium heat and add the butter. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and strain the curd through a fine-mesh strainer into a bowl.
  4. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Let it cool, then refrigerate until ready to use.
