Ingredients 

Lemon Curd

  • 1 cup Lemon juice freshly squeezed
  • 1 cup Sugar
  • 4 Eggs large
  • ½ cup Butter unsalted, cut into pieces

Parfait Assembly

  • 2 cups Greek yogurt
  • 1 cup Granola
  • ½ cup Fresh berries for garnish

Instructions 

  1. In a saucepan, combine lemon juice, sugar, and eggs. Whisk until smooth.
  2. Add butter and cook over medium heat, whisking constantly, until thickened. Remove from heat and let cool.
  3. In parfait glasses, layer Greek yogurt, lemon curd, and granola. Repeat layers.
  4. Top with fresh berries and serve immediately.
