Ingredients 

Base

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, melted
  • ¼ cup sugar

Filling

  • 1 cup sugar
  • 2 tablespoon all-purpose flour
  • ½ teaspoon baking powder
  • 3 large eggs
  • ½ cup lemon juice
  • ½ cup shredded coconut

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, melted butter, and sugar for the base. Press into a greased baking pan.
  3. Bake the base for 10 minutes.
  4. In another bowl, whisk together sugar, flour, and baking powder for the filling. Add eggs, lemon juice, and shredded coconut. Mix well.
  5. Pour the filling over the baked base and return to the oven. Bake for an additional 15 minutes.
  6. Let cool before cutting into bars. Enjoy!
