Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 0.25 cup sugar
  • 1 pinch salt
  • 1 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 0.5 cup lemon juice freshly squeezed
  • 0.5 cup heavy cream
  • 1 cup blueberries fresh

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly. Add cold water and mix until dough forms.
  3. Press dough into tart pan. Bake for 15 minutes or until golden brown. Let cool.
  4. In another bowl, whisk together sugar, eggs, lemon zest, lemon juice, and heavy cream until smooth.
  5. Pour filling into cooled crust. Bake for 20 minutes or until set. Let cool completely.
  6. Top with fresh blueberries before serving.
