- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- ½ teaspoon Salt
- 2 tablespoon Sugar
- 1 Egg
- ½ cup Milk
- ¼ cup Melted butter
- 1 teaspoon Vanilla extract
- 1 cup Fresh blueberries
- 1 tablespoon Lemon zest
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
In another bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix well.
Combine the wet ingredients with the dry ingredients. Stir until just combined.
Gently fold in the blueberries and lemon zest.
Spread the batter evenly on the prepared baking sheet.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let it cool slightly before rolling it up with the parchment paper. Allow it to cool completely before serving.
