Instructions

  2. Reduce heat to low and simmer, stirring occasionally, until the rice is tender and the mixture is thickened, about 30 minutes.
  3. Remove from heat and stir in the vanilla extract and lemon zest.
  4. Gently fold in the blueberries. Serve warm or chilled.
