Lemon Blueberry Bread

Main Ingredients
- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup blueberries fresh or frozen
- 2 large eggs
- ½ cup milk
- ½ cup vegetable oil
- 1 tablespoon lemon zest freshly grated
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, combine eggs, milk, oil, lemon zest, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the blueberries.
Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
