Filling
- 1 ½ cups granulated sugar
- ¼ cup all-purpose flour
- 4 large eggs
- ⅔ cup freshly squeezed lemon juice
- 1 tablespoon lemon zest optional
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a mixing bowl, combine softened butter, 2 cups of flour, and ½ cup of sugar. Mix until well combined. Press the mixture into the bottom of the prepared pan.
Bake the crust for 15-20 minutes, or until firm and golden. Remove from oven and set aside.
In another bowl, whisk together 1 ½ cups of sugar and ¼ cup of flour. Add the eggs, lemon juice, and lemon zest, and whisk until smooth.
Pour the lemon mixture over the baked crust. Bake for an additional 20 minutes, or until the filling is set.
Allow the lemon bars to cool completely in the pan before cutting into squares. Dust with powdered sugar if desired.
