Classic Australian dessert made of sponge cake dipped in chocolate and coated with coconut.

Cake
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter softened
- ½ cup sugar
- 2 eggs
- ½ teaspoon vanilla extract
- ½ cup milk
Chocolate Coating
- 2 cups powdered sugar
- ⅓ cup cocoa powder
- ½ cup boiling water
- 1 cup desiccated coconut
Preheat oven to 350°F (175°C). Grease and flour a baking pan.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Gradually add the flour mixture to the butter mixture, alternating with milk. Mix until just combined.
Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool on a wire rack.
Once the cake is cool, cut it into squares.
For the chocolate coating, mix powdered sugar and cocoa powder in a bowl. Gradually add boiling water, stirring until smooth.
Dip each cake square into the chocolate mixture, then roll in desiccated coconut. Place on a wire rack to set.
