  • 1 rack Lamb French-trimmed
  • 2 tablespoon Olive Oil
  • 4 cloves Garlic minced
  • 1 tablespoon Rosemary chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. Rub the lamb rack with olive oil, garlic, rosemary, salt, and pepper.
  3. Place the lamb rack in a roasting pan.
  4. Roast in the preheated oven for 25 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. Let the lamb rest for 10 minutes before carving.
