Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 4 large egg yolks
  • 1 can sweetened condensed milk (14 oz)
  • ½ cup key lime juice freshly squeezed
  • 1 tablespoon lime zest

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  3. Bake the crust for 10 minutes. Remove from oven and let it cool while you prepare the filling.
  4. In another bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  5. Pour the filling into the cooled crust and bake for 15 minutes, or until the center is set but still slightly jiggly.
  6. Let the pie cool to room temperature, then refrigerate for at least 2 hours before serving.
